Store whole, unwashed eggplant at room temperature (around 10-12°C) in a cool, dry place away from direct sunlight. Do not refrigerate unless it is already cut, in which case wrap tightly and store in the fridge for up to 2 days. Best used within 3-5 days of purchase; wash thoroughly just before cooking.
